Here is this month’s healthy kid-friendly recipe:
Mochi Yogurt Treats
Basic Ingredients:
2-3 sheets of rice paper
1 cup Greek yogurt, plain, vanilla, or your favorite flavor
Fruit: strawberries, blueberries, raspberries, banana, etc.
Optional add-ins: honey or maple syrup for sweetness
Preparation Steps:
Soften the wrapper:
Submerge a sheet of rice paper in warm water for 20 to 30 seconds until soft and pliable. Then place it on a plate.
Assemble:
Scoop 1-2 tablespoons of your yogurt mixture into the center of the wrapper and top with your chopped fruit. Add another layer of yogurt on top.
Fold & Freeze:
Fold the edges of the rice paper inward like a mini burrito or envelope. Freeze for 40-60 minutes to achieve a creamy, ice cream-like bite.
